Hippocras “Spiced Wine” can be attributed to the Greek physician Hippocrates, a hooch made from wine, mixed with the necessary pungency of cinnamon and ginger, best served warm.

 

Modus Vivendi

 

3 QTS white or red wine

¾ cups brown sugar or honey

1 ½ TBLS grated cinnamon

1 TSP fresh grated ginger

1 TSP grated nutmeg

1/4 TSP ground mace

¼ TSP ground cloves

¼ TSP powdered cardamom

1 pinch white pepper

 

Heat wine over medium low fire. Do not allow to boil. Stir in spices, stir until dissolved thoroughly. Allow to cool slightly, pour into jar or wine bottle and allow resting for one week. Strain through cheesecloth before bottling, cork and allow to rest four to six weeks in a cool, dark environment. Once opened drink and enjoy.
