Part of my role has been determining the nutritional information for each recipe, but through the process I’ve listed, tasted, and visualized each meal personally. During this project, recipes were improved by reducing fat, sodium, and caloric count, while increasing fiber whenever possible. All this was done without sacrificing the appearance, texture, or taste of the dishes. Each recipe was then retested for taste, quality, and accurate preparation instructions.
So much has been written about nutrition, cholesterol, fats, and diets during the past ten years, it’s no wonder we sometimes feel bombarded with information. That’s why in this cookbook we’ve gotten back to the basics of nutrition. MORE THAN THIRTY years ago, while making a personal appearance at the Buffalo Food Show for PM Magazine, I met a young man selling cookware and pitching the benefits of waterless, greaseless cooking to a rather large and interested audience. I was impressed not only by his delivery and promotional abilities but by what he had to say about his unique method of cooking foods without water or grease. He gave me a couple of pans to use in my performance, or I should say “promote for him,” and I have to admit I was impressed with both the product and the method. Our paths crossed again in Hartford, Charlotte and again in Tampa, and from that point in time we have become good personal friends, business associates and, for a few years, even neighbors. I encouraged him to design his own cookware and start his own company. For once, somebody listened to good advice and today Charles Knight has become one of the foremost experts on cookware designed specifically for the home cook, as well as on the methods of waterless, greaseless cooking.
It only takes good common sense to cook healthy food. If you start with mediocre ingredients you end up with a mediocre dish, and life is too short to eat lousy food. If you use lousy cookware… well you know what happens. Waterless, greaseless cookware is designed specifically for the home cook, but professionals can employ the methods used in his cookbook Healthy Meat and Potatoes as well. I use Health Craft cookware in my restaurant and have employed the cooking methods and you should too. Good food is a unique, delightful “language” spoken through tempting tastes, stimulating aromas and attractive presentations. It’s the oldest form of every civilization and culture. A salivating link to our past continuously rediscovered, refined and reshaped in our present. Good food is the essence of friendships and neighborhoods, the frosting that tops exciting events and the surprising highlight of any party or celebration.
Hearty and delightful meals are created with gentle hands and warm hearts. This I learned as a youngster growing up in the wonderful ethnic mix of New York and New Jersey, with home kitchens brimming with incredible dishes brought with care from the Old World. To those around me, good food was the nourishment of both body and soul. This harvest of flavors was the great influence of my boyhood. From the time I was old enough to know my way around the neighborhood family kitchens, I wanted to be a chef. All my dreams came true as I moved into the fascinating culinary world.
In my latest cookbook, coauthored with my son Chef David Knight, I have assembled many of the fondest ethnic tastes and American favorites I enjoyed in my boyhood. Other ideas came from my high school years working in the butcher shops and as a short-order cook. More came from the inspiration of my good friend and neighbor, TV Cooking Show Host Chef Tell and culinary education. Even more came in preparation for my weekly television appearance on the Food Network and WFLA-TV in Tampa and from developing the curriculum for the Health Craft Cooking School. And now, living in Tampa, I have added some Southern delights and the ethnic mix of Ybor City’s Italian, Spanish and Cuban cuisine, all to come in the website pages to follow.
I have also included what I have learned from nearly four decades in the cookware business: a practical way to create old classics and family favorites with reduced fat, less sodium, lower cholesterol and calories without compromising taste or culinary training. Better tasting meals that help develop better health, a winning combination! The secret is waterless, greaseless cooking.
